Vegan (or not) tomato sauce
Talk
about a healthy meal!! This is a PRIME example of being able to feed
your family a healthy meal and having the choice to be Vegan as well. I
made zucchini noodles with tomato sauce. All home made!! I forgot to
picture the crusty ciabatta bread with rosemary and olive oil that went
with it! This is by far the best sauce I ever made! Feel free to share

| After making zucchini noodles with my veggetti, there are these little stumps left. No need to throw away good food! I diced them up and cooked them with the rest of the veggies! |

| Portion out the amount you want to remain vegan. |

| After cooking the ground turkey in a separate pan, add it into the other portion of sauce not intended to be vegan. |

| Sautéed zucchini noodles. I used the same pan that I used to saute the other veggies but added just a tiny bit more olive oil. Only cook until heated otherwise they get too limp and soggy. |

Favorite Easy Dinner
Mixed roasted veggies are absolutely to die for! And so easy. Healthy doesn't have to be hard. Healthy doesn't have to taste bad. Warning: may lead to getting seconds or thirds!
Recipe:
Chopped ANY veggies you like.
Toss in EVOO
Garlic powder
S&P
Roast in oven at 425° for about 40 min (stir and turn veggies twice while cooking)
Broiler on high for 3-5 min (watch closely) to get those nice browned areas.
